Many people are not fond of picking out crab meat as it yields only a few bits of meat but takes some good effort to do so. This is a reasonable complaint as it is somewhat true. Different species of crab will yield different amounts of meat with regards to its body weight, though there is a different solution to this dilemma. Crabs, for the most part, have hard shells. Crabs need to shed off their hard shells in order to grow larger as their shells don’t grow with them.

The crabs shed their shells as they grow and will then grow a new hard shell but this time a larger one. This shedding happens on a monthly basis. This is what is called “Molting”. Crabs grow about 33% larger each time they molt. Beneath the crab’s hard shell is a soft shell that is already forming prior to the molting process. This formation is apparent and can be seen on the crab’s paddles. The soft shell that the crab is left with after they molt is very pliable and stretchy. The crab that is at this soft shell stage is literally called a soft shelled crab.

The crabs will literally just crawl their way out of their shells as they grow and then grow a new hard. Female crabs will approximately molt about 18 to 20 times over the course of their short lives. Male crabs on the other hand will molt about 21 or 23 times. Another interesting fact is that it becomes harder and harder for crabs to molt as they grow old. Its common for crabs to die during the molting process.

These crabs are what a lot of cooks are looking for and what many people choose to enjoy their crab experience. Soft shell crabs are the perfect crabs for culinary use, in addition to that, soft shelled crabs are weak as they have just finished molting. Soft shell crabs are easier caught as they are at a weak state. Crabs wont molt anywhere besides underwater.

There are a variety of ways of catching soft shell crabs. The most common method of catching them is a method called scapping. This is simply just going over shallow waters looking for crabs that are molting and then scooping them with a long handled net.
